Yes. You read that right. I kept seeing recipes for these cookies and figured that there's no way that they're any good. Just peanut butter, sugar and egg? I mean, I love peanut butter but there is no way these could be good, right? Then my sister helped a friend clean out his pantry so he could move and she gave me the biggest jar of unopened peanut butter that I've ever seen.
With that monster in my cupboard taking up room, I thought what the heck. I'll give it try. I decided to add in some white chocolate chips in the first batch. Then the second batch I added in salted caramel chips and chopped pecans.
Needless to say, I'll be making these quite often. Super easy to make and really really good. And no flour!!
Recipe:
Preheat oven to 350°
Combine 1 cup peanut butter, 1 cup white sugar and 1 egg; mix till smooth. (Add in chopped nuts or mini chips if you like)
Drop by spoonfuls onto a baking sheet.
Make cross tines with a fork dipped into sugar, if you like.
Bake for 6 to 8 minutes.
Do not overbake! They are best when they're still soft and just barely brown on the bottoms.
