Stuffed Pork Loaf


I thawed out a package of ground pork. What to do with it, though. What's in the fridge and pantry. This is what I came up with and it was so good!


I mixed together a chopped jalapeño pepper, an egg, some panko crumbs, grated goat cheese and seasonings (Allspice Sonoma Seasoning Blend, salt, pepper & garlic granules). Shaped and rolled it out. Layered 6 asparagus spears on it and rolled it up, jelly roll fashion. Baked it at 375° till done (160° with the instant meat thermometer). Sliced it and served with a side of mashed potatoes topped with more Sonoma Seasoning Blend.


It was so good. I'm sure this process could be used with so many other different "stuffings". A great way to add in some veggies to your meal without getting another pan dirty.
