Chicken Andouille Veggie Skillet
A staple in my fridge & freezer is Chicken Andouille Sausage. It's a great way to cook up a tasty and delicious meal quickly. This version has chopped onions, garlic, red & yellow peppers, sliced sausage, and chopped Brussels sprouts. Sauté until onions are transparent and the veggies start to soften. And even kick up the heat a bit to brown up the edges of the sausage.
Then I like to add in a can of diced tomatoes and spices (even a bit of hot sauce!) and let it simmer a bit. It's great on rice or orzo. Or you can also put in a larger pan and add a few cups of broth and let it simmer awhile and have a yummy soup. Toast up some flatbread or sourdough for a side. Super easy and so good!
