Catfish Mushroom Bake


I know. Catfish isn't a favorite for many because it's, well, fishy. I love it. If you're not a fan, this recipe works well with tilapia or flounder, or another dense fish fillet.


Preheat your oven to 375°. Layer arugula leaves in a baking stone pan with edges. Coat the fish with a little olive oil and the seasoning of your choice. I love a bit of spice. Chili powder, cumin, and garlic granules are good choices. Even some red pepper flakes. Top with sliced mushrooms, a brush of oil and salt & pepper.


Bake until the fish starts to flake. About 20 minutes or so.


I served this with Oven Roasted Veggies.
